DAYS TO HARVEST –
For early planting, start seeds indoors with soil temperatures ~60 degrees (minimum 55 degrees). Plant ~1/4″ in soil and keep evenly moist. Make sure seedlings have enough light otherwise they may become leggy and not develop properly upon transplanting. Harden off transplants around 4 or 5 weeks by bringing trays outdoors a few days to a week before transplanting. Bring inside temporarily if there is danger of frost. The plants should have 3 or 4 true leaves at this point.
In cooler climates, seeds can be direct sown after the soil warms to about 55-60 degrees. If there is still a danger of frost, make sure seedlings are covered. Add 2-3 weeks to harvest date.

Prefers clay-loam soils with a pH close to neutral. May require calcium and/or boron.

Cole crops and their waxy leaves are particularly well suited to colder growing regions especially if adapted to the area. Cabbage usually withstands a couple frosts. Even if cabbage is hit by a hard frost, you can still harvest and remove the outer damaged leaves to reveal the untouched inner leaves and heart of the cabbage.
Harvest when the head has completely formed. It will head up similarly to romaine lettuce. Cabbage can remain unharvested for about a week depending on temperature but watch for the opening of the head at the center which indicates that the cabbage is trying to flower. If head does flower, shoots are edible.
