Certified Biodynamic

(C. pepo) Varietal improvement in 2009. 7-9×3 in. Oblong cylindrical fruit with cream skin, striped and speckled with dark green. Sweet, tender, golden-orange flesh reminiscent of sweet potato. Good for baking and stuffing. No curing needed. Short term storage. A favorite at farmer’s markets and CSA’s. Very sweet and melting flesh, we like these cut in half and baked, peeled chopped and roasted with sage, onion, olive oil and dried cranberries, in miso soup instead of tofu, or in many other favorite squash recipes.

We offer a bulk rate of $13.50/oz for orders 2 ounces and more.

USES & COOKING SUGGESTIONS

Sanura Weathers suggests a Spicy Delicata Squash soup – great for those cold days as we enter fall! We also love this squash simply roasted with sage, garlic, and onions which then can be eaten on its own or thrown on top of a pizza, risotto, or salad.
