Dried styrian pumpkin seeds or pepitos can be used to top nearly any salad, soup, etc. These are a must for Lia’s favorite kale salad with finely chopped Judy’s kale, cooked and sliced Feuerkugel beets, finely grated Scarlet Nantes Improved carrot, kiwi, pepitos, balsamic vinegar, olive oil and a little herb salt. The flesh of this pumpkin is a great addition to livestock feed, chickens, pigs, cows, goats, sheep and horses all love it, but it also tastes good enough for the human table–it’s good simply roasted with a little butter and salt. The texture is somewhat coarse, like a spaghetti squash, with a very mild flavor. These pumpkins with their stripy skins make very special jack-o-lanterns too. We like to invite all the neighbors over in mid-October to help us scoop out the seeds and to make jack-o-lanterns to take home.
