(Valerianella locusta) Also known as Lamb’s Lettuce, Mache, and Rapunzel (this is the green Rapunzel’s mother craved and stole from the witch’s garden, earning her daughter’s curse). Corn salad is the most delicious winter salad green there is. Mild and nutty with an aromatic finish, this winter green has long been treasured in Europe and now is finding a following in the US. This strain was given to us by Henrike Holdrege of The Nature Institute. New York Hardy is the hardiest variety we’ve come across, it has overwintered uncovered outdoors here in zone 5 for the last 18 years. Plant in a greenhouse, coldframe, or outside in early spring or throughout the fall.

SOWING
Sow corn salad lambs lettuce early spring for spring crop or early fall for fall/winter harvest. Does not like heat.
Sow ~1/4″ deep in 3-4″ wide bands with 9-12″ between strips. ~100 seeds/square foot
Keep soil evenly moist until first leaves appear
