(Barbarea verna) Also known as Land Cress. Slightly spicy, water-cress flavored rosettes of dark green, deeply lobed leaves that grow well in spring and fall. Excellent in salad mixes, sandwiches, or on its own. This is one of the most intensely flavorful salad greens we know of. Very cold hardy, does very well in a winter coldframe or hoophouse. Does not need to be in water to grow, grow as you would other greens. Popular at London’s Borough Market.

Allow 7-14 days for germination

SOWING
Broadcast or sow upland cress green seeds in bands ~150 seeds/square foot or 300-400 seeds/square foot for microgreens. Cover with a thin layer of soil and keep evenly moist.

LIGHT PREFERENCE
Partial sun

SOIL REQUIREMENTS
Keep evenly moist in soil sandy/loamy soil. Cress also does well in gently running water.

PLANT SPACING
1/2-1″ apart

HARDINESS
Prefers cool weather. Will tolerate light frost.

HARVEST
A cut and come again green or in trays as a microgreen. Cut leaves ~1/2-1″ from soil and let leaves regrow for 3-5 harvests.

USES & COOKING SUGGESTIONS

Cress is often used as a microgreen to top salads, sandwiches, garnish soups, steaks, fish, chilies…virtually almost anything!

For larger leaves, add to your salad mix, lightly braise or steam, or puree into a dressing or pesto.
