There are so many uses for giant italian plain leaf parsley, you really can’t go wrong with using it in just about anything. Here are some of our very simple favorites: Simple summer pasta salad, with the pasta of your choice (we like fusili for this) cooked al dente, and seasoned with plenty of good olive oil and salt to taste, a very large handful of chopped plain leaf parsley, chopped red or orange bell or other sweet peppers (we like the King of the North, Lipstick or Orange Bell for this) chopped tomatoes (Kimberton Hill Yellow, Rainbow Pineapple, German Green, Ruth’s Perfect and/or Black Krim–all of them together are lovely) and chopped fresh mozzarella cheese. A squeeze of lemon juice, and you have a lovely, refreshing late summer salad. Our other top easy use for plain leafed parsley is to take a very large handful, pull off any larger stems, and put it in a blender with lemon juice, olive oil and a little salt. This dressing goes on anything, but we like it on brown rice with a little feta cheese, or on salads, or on meats, or on pasta, or on roasted squash, or on grated turnip salad with peas, or, or…
