SOWING
Direct sow pac choi prize seeds ~1/4″ deep, 2″ apart and thin to 6-8″ apart OR sow indoors 4 weeks before last frost and transplant at true leaf stage (follows first set of two leaves)

Partial to full sun

Well draining soil with high organic matter

Annual, thrives in cooler weather can tolerate mild frost
HARVEST
When pac choi is at size desired, slice rosette at base. Can be harvested as baby pac choi at 5-7″ or full grown at anything over 10″ (watch center of rosette for signs of bolting)
USES & COOKING SUGGESTIONS
With the mix of the delicate leaves and crisp stalks, pac choi is great sauteed on its own with garlic, as a vegetable in stir-fry, or to add gusto to a soup whether it be miso or not-so-traditional chicken soup.
