Ping Tung Long Eggplant

DAYS TO HARVEST
65-75 from transplant

SOWING
1/4″ deep. Sow approximately 6-8 weeks before last frost in green house. It is best if green house temperatures do not drop below 65 degrees. Heating mats and plastic covering over tables can help keep warmth and moisture in. Transplant outside 2-3 weeks after last frost. In the North East, it is traditional to plant warm weather crops on or after Memorial Day. Eggplant can be transplanted 1-2 weeks earlier if kept under row cover (which may be advisable while plants are small to prevent flea beetle damage).

SOIL REQUIREMENTS
Ping tung long eggplant prefers a slightly acidic soil with a pH of 6.5-6.8. Spraying with compost tea at transplant is recommended.

HARDINESS ZONES
Eggplant is a warmer weather crop and will NOT tolerate frost.

HARVEST
Remove fruits when they are 6-12″ long and fruit is still firm. Skin will be more tender than other varieties.

USES & COOKING SUGGESTIONS

This variety is great halved, sliced, and sauteed with red peppers and garlic. Serve over a bed of rice or on its own!
